B.R. Guest, Inc.'s New York Restaurants Increase Operational Efficiency and Control Food Costs With EatecNetX

Emeryville, CA, May 6, 2003 - Eatec Corporation is pleased to announce that B.R. Guest, Inc., owner of eleven renowned, high volume restaurants in New York City, is relying on EatecNetX, the industry leading enterprise back-office solution, to manage their entire foodservice operations. EatecNetX has enabled B.R. Guest to increase operational efficiency and control food costs.
B.R. Guest’s restaurants have received high marks and praise from numerous food critics including the New York Times, Crain’s Business and Zagat Survey. The restaurants include: Atlantic Grill, Blue Fin, Blue Water Grill and Ocean Grill for popular seafood cuisine; Fiamma, featuring Italian fare; Isabella’s and Park Avalon, for Mediterranean cuisine; two Ruby Foo’s, with Pan-Asian inspired menus and two Dos Caminos offering authentic Mexican fare. Their twelfth restaurant, Fiamma Trattoria, will open in Las Vegas in July 2003. In addition they have recently purchased a hotel in Arizona that will launch a new hotel division.
B.R. Guest has over 150 employees who actively use EatecNetX to manage operations. EatecNetX is used for recipe and menu development, inventory management, purchasing and receiving, vendor bidding, requisitions and transfers, and production management.

The utilization of EatecNetX by B.R. Guest has resulted in major efficiencies. Due to the enterprise nature of EatecNetX, operational data from all the restaurants and the commissary is on a single database. Therefore, B.R. Guest has been able to better manage their centralized purchasing and online real-time requisitions and transfers, greatly improving the handling of both purchased items and production items. The system facilitates vendor price comparison and vendor selection, purchase order preparation and issuance, and vendor conformance reporting. In the commissary, where B.R. Guest produces a wide variety of goods ranging from bread to dim sum, EatecNetX provides production planning and purchasing tools that are driven from sales forecasts or requisitions from the stores.
“Eatec provided B.R. Guest with a true web-based enterprise system,” said Jacobs. “With our old DOS-based application, we had a separate database in each restaurant so we were forced to upload, download and synchronize our data. Now that we have EatecNetX, all of our information resides in one centralized database, accessed over our corporate intranet, so we have real-time information about our operations whenever and wherever we need it.”
EatecNetX interfaces to B.R. Guest’s point-of-sale and financial systems. Daily sales data is imported into EatecNetX from the point-of-sale and is used for analyzing theoretical versus actual inventory usage while also providing a basis for forecasting future purchasing and production requirements. All transactional data is summarized by account code and exported from EatecNetX daily to B.R. Guest’s accounts payable and general ledger.
“We now have the ability to control our food costs more effectively. With our old application, we had to gather data from the point-of-sale, upload it into multiple databases and link them with several Excel spreadsheets. This meant that the data was not as current as we needed for a timely actionable review. EatecNetX interfaces directly to the point-of-sale giving us real-time data regarding our food costs,” said Jacobs.
